Following on from yesterday's post, with delicious ways to use our leftover stale bread, I thought we'd have a look at another much wasted,but super healthy ingredient in our kitchens, the simple banana 🍌

There are so many fabulous ways to use bananas and the riper they are the better!  Here then, are six of my favourite ways to use up those ripe bananas, including one kitchen experiment that turned into the perfect treat for Hubby's birthday πŸ’–

6 Delicious Ways To Use Those Ripe Bananas 🍌

Below, you'll find six of my favourite ways to use up any left over bananas found in our kitchen honeys, I'll include links to the full recipes for all of them and I'm sure you'll find a favourite too, enjoy honeys x

1. Banana Muffins

These muffins are so easy and fun to make, they're healthy and they taste amazing too.  They have a dense consistency, a bit like a bran muffin, they're so delicious, perfect to have with your morning coffee πŸ˜‹

Why not add them to lunch boxes too, as a healthy treat.  Bonus points if you ask your wee ones to help you make them.  They'll have the best fun and will be so proud to add them to their lunch boxes.

2. Banana Bread

Even seeing this photo makes me want to go make this mouth watering treat again πŸ˜‹

I know there are so, so many recipes for banana bread online, but mine came about because of a heatwave last year that was spoiling the fruit in our kitchen far too quickly.  I had four bananas that had to be used or binned - and the binning thing just wasn't going to happen! 

So, my first thought was to make up two batches of banana muffins but having put one batch into the oven, I had an idea 😊  Off I went and fetched my loaf tin and just like that we had a banana loaf and Hubby loved it πŸ’– It was perfect honeys, just like the muffins it had a sort of dense texture but was so fluffy and delicious.  A real treat!

3. Sponge Cake With Banana Whipped Cream Filling & Cream Cheese Frosting!

If you're looking for a real treat, something to make an occasion special, an utterly yummy, can't-just-have-one-slice kind of cake this has to be it honeys πŸ’–  

Six delicious ways to use up those ripe bananas, with recipes and tutorials, including this moist, fluffy sponge cake with banana cream filling and cream cheese frosting.

The filling in this sponge cake is whipped cream with mashed bananas whipped through, the icing is sticky and very sweet and delicious and is made using cream cheese πŸ˜‹ 

Of course, if you want to make it even more yummy, you could add a layer of sliced banana on top of all of that gorgeous whipped cream for a double serving of banana goodness πŸ˜‹

4. Banoffee Pie 

Here it is honeys, at least one good reason that bananas were created.  Is there another treat as special as banoffee pie?  This version is the easiest and yummiest (in my humble opinion anyway lol 😊)

It can't get any easier or faster to make.  With it's no-bake base, covered in caramel, followed by a layer of sliced bananas and then topped with whipped cream and grated chocolate, it's a dessert to look forward to πŸ˜‹  You'll find the recipe here honeys πŸ’–


5. Shortcake Biscuit, Caramel, Banana & Choc Treat

I was so pleased that Hubby loved this πŸ˜ŠπŸ’–  It started out as one of my kitchen experiments. I do love being in the kitchen and trying different ingredients together just to see how it turns out.  On this occasion I was trying to make a special dinner for Hubby's birthday and wanted something unusual for dessert.  Then this happened...

I think I might have been influenced by the banoffee pie a little bit, now that I think about it, but I made it special by skipping the whipped cream and replacing it with a thick layer of melted, dark chocolate πŸ˜‹   

It was very rich, and also very sweet, but more than anything it was awesomely delicious 😊 It could be made larger, a flan size maybe, to share with loved ones.  To do that, just use a loose based flan tin and chill in the fridge for as long as you can before removing the upper part of the flan tin and serving.

6. Healthy Ice Cream:

Saving the best for last!  Much as I adored making all of the others on this list, the scoop of extra yumminess you can see in the little bowl in this photograph is a game changer for sure!

This is possibly the nicest, yummiest ice cream I've ever had honeys.  If I hadn't made it myself, I wouldn't believe what it's made from.... actually I still don't believe it! 

This ice cream has only one single ingredient and is so easy to make it might as well go right ahead and make itself 😊  

Given the topic of this post, you'll have guessed that the only ingredient is bananas and might be wondering how those forgotten-in-the-fruit-bowl-and-left-to-go-too-ripe bananas could ever turn into this bowl of yum! 

You can see exactly how easy it is to make here honeys, honestly, this chilly treat is so good you'll never throw away bananas again 😊  No more money wasted on good, healthy fruit that ends up in the bin and best of all, it doesn't just work on bananas! 

A dear friend told me she'd tried the same method with peaches and that it was beyond delicious! With peaches you'd have to remove the stones of course but I definitely have to try it, I do love peaches. 

To change this delicious healthy, icy treat a little why not add a handful of frozen strawberries to the blender?  Or you could add a drop or two of green food colouring, and two drops of mint flavouring, then add a handful of chocolate drops to make a healthy version of choc chip ice cream 😊
