It's Day three of Blogtober already π I'm a little late today. It's getting colder and I wanted to share the yummiest, easiest dish. It's so delicious and it's the perfect, warming, comfort food. Ready in a flash, especially with help from your freezer (more about that later) so it's perfect to whip up after a busy day.
Mix it all together, pop into the oven and it'll be ready before you know it π

I know it's only the beginning of October, but I could have sworn it was January when I woke up this morning! It was freezing! I looked at the clock and it was a little before 5am, so off I went downstairs (half expecting to find penguins playing on the stairs lol) and good grief it felt even colder downstairs.
Whose idea was it to have laminate flooring and tiles across the lower floor of the house... oh yes, that was me <face palm> We might need more rugs honeys, or I could remember to put my slippers on π Enough of my waffling then, on to our delicious plate of yumminess π
Super Easy, Super Yummy, "Dinner-in-a-flash" Sausage & Bean Melt
Ingredients:
1 can of baked beans
1 jar of tomato pasta sauce
1 medium brown onion
1 pack of large sausages
4-5 small potatoes
Directions:
1. Pre-heat the oven to 180 C (160 for fan oven) 320 F or Gas mark 4.
2. Add a little olive oil to an oven proof pan, such as a frying pan or skillet pan and place onto the stove over a medium heat.
3. Pierce the sausages all over with a fork and carefully add to the pan, cooking till browned. Feel free to use your favourite sausages honeys. This yummy dish works just as well with vegetarian sausages, my favourites are the Linda McCartney ones but as I say, use your favourites. Depending on their size, allow 2-3 sausages per serving. So, if you're serving 3-4 people, you'll want 8-12 sausages.
4. When cooked, very carefully remove the sausages from the pan and place the dish they're in to one side till later.
5. Remove the pan from the heat till needed again, leaving the olive oil the sausages have cooked in inside.
6. Peel and slice the potatoes. Place them into a pot of slightly salted water and par boil them. After 7-10 minutes, drain your potato slices and place them to one side till later. Or... you could remember that you have a bag of frozen potato slices in the freezer and use them π
7. Peel and dice the onion and add to the pan the sausages were originally cooked in honeys. The olive oil will have held onto all of that lovely sausage flavour. Return the pan to a medium heat and brown the onions, stirring all the time, for approximately 3-4 minutes.
8. Add the can of baked beans and the jar of tomato pasta sauce to the onions in the pan and stir until warmed through. I used a jar of tomato sauce (with chunky vegetables already added) but whatever your favourite tomato sauce is will do honeys.
9. When warmed through, very carefully add the sausages to the pan and stir though.
10. Remove the pan from the heat. Carefully arrange the layer of potato slices on top of the pan. I used a pack of frozen potato slices, just because we had them in the freezer π
11. Carefully place the pan into the oven, on the middle shelf, for 25-30 minutes until the potatoes are a golden brown and the sauce is bubbling.
12. Share with loved ones and enjoy honeys!
Optional:
1. Cut down cooking and preparation time by using (as I did this time) a pack of frozen potato slices.
2. Around 10 minutes before the end of cooking time, very (really very it'll be hot!) carefully sprinkle grated cheese over the top of the potatoes and return to the oven for a lovely extra dash of yummmm!
3. Not a fan of sausages? Why not use chicken or tofu or your favourite beans.
4. Why not raid the freezer and see what's there? Add some frozen peas or sweetcorn? Raid your herbs & spices, pick your favourite and make this dish all yours honeys x
This is so delicious it's been added to our dinner rotation and it's never the same twice because we swap out or add whatever we feel like that night. I hope you enjoy it as much as we do π
Lovely, warm, comforting dishes like this one are one of the few things I really like about fall/winter. I'm so not a fan of this time of year. I know, I know. Changing colours of the garden etc but honeys, the change in temperatures and the cold and damp (I live in Scotland, where it rains about 99.99999% of the time... maybe not but it feels like it does lol) are not kind to my arthritic bones π
In a perfect world (for me anyway) there would be only two seasons every year, just spring and summer and they'd be in a loop. The gorgeous roses in our garden would no sooner be thinking of wilting away when they'd burst into life all over again π
To be fair though, Jade does love helping her Dad clean up the leaves in the back garden every autumn. Or rather, she likes jumping into the huge piles of leaves her Dad has spent ages gathering together while she keeps taking him her ball to throw πΆπ and he's such a good Dad that he doesn't even mindπ

Hi Jenna, hello again, so sweet of you to visit, thank you honey you've made my day x This is so good for chilly evenings and so easy to make it practically makes itself :) I've tried making it with the Linda McCartney vegetarian sausages (the red onion and rosemary ones) and a drained can of cannelloni beans. Sliced mixed (bell) peppers and butter beans are also yummy too.
