Blogtober Day 25: Sharing A Yummy Favourite Frittata Recipe๐Ÿ’–

Hi Honeys, 

It's the start of a new week and the rain's stopped (for now anyway ๐Ÿ˜Š) so i thought I'd share one of our favourite dinners.  Hubby likes it so much that he'll even have some next day for his lunch whenever we make it.๐Ÿ’–  

We do change some of the ingredients sometimes, but no matter if it's spinach and peppers or three cheese and onion or this smokey bacon version, we still love it. 

What is it we love? A delicious, light and fluffy frittata.๐Ÿ’— 

 Super easy smokey bacon, tomato, cheese and peppers frittata.

Hubby said that this one, with it's smokey bacon bits and it's combination of lots of gooey, yummy mozzarella cheese on the inside and fab Scottish cheddar as a topping, was just amazing!๐Ÿ˜‹

Smokey Bacon, Tomato, Cheese & Peppers Frittata


Ingredients: (serves 4-6) 

6-8 medium eggs
Mixed peppers - I used frozen, but use fresh if you prefer honeys (use lots if you like them or less/none if you don't)
1 pack of smoked bacon lardons or 3-4 rashers of smokey bacon cut into small pieces
I ball of mozzarella (usually 125g)
2 medium tomatoes - cut into thin slices to top
120g (approx) medium soft cheese (I used Scottish Cheddar but use your favourite) - grated/shredded as a topping 

Directions:

1. Pre-heat the oven to 160C/325F/Gas Mark 3.

2. Place a frying pan or skillet on a medium heat.  
Note: I use my frying pan because it's oven proof but if you don't have one then just use your frying pan till you get to step 8 and then pour mixture into an ovenproof dish or casserole dish and finish assembling it (adding topping of tomatoes and cheese etc) when it's in the dish.  

3. Add a little splash of olive oil and allow it to heat just a wee bit.  Carefully add your peppers and lardons/pieces of bacon and cook over the medium heat, stirring and keeping them moving with a spatula so they don't stick. 
note: don't have the heat up high enough to let the pan "spit" hot oil! Be careful honeys x

Super easy, smokey bacon, cheese and peppers frittata: First the peppers and the smokey bacon pieces are cooked in a little olive oil.

4. When the peppers and bacon are done, carefully remove the pan from the heat.

5. Fetch a bowl and crack your eggs into it and beat them together. 

6. Carefully cut your ball of mozzarella into small pieces and then add them to the eggs and mix through so it's all coated in the egg. 

7. Return your pan with the peppers and bacon bits to the medium heat and stir for a minute or two till it's heated through again. 

8. Pour in the egg and mozzarella mixture and stir till everything is all coated in the egg mixture and it begins to thicken/cook, then remove from the heat again...

Super easy, smokey bacon, cheese and peppers frittata: The eggs are then beaten together and the mozzarella cheese cut into small pieces and added to the eggs before being mixed together and then added to the pan with the peppers and ham.

9. Arrange your thin slices of tomato on the top of the pan, followed by a good sprinkling of grated/shredded cheese...

Super easy, smokey bacon, cheese and peppers frittata: Remove from the heat and place some thinly sliced tomato on top of the eggs mixture, followed by scattering some grated cheese over the top.

10. Place the pan/skillet (or the casserole dish) into the pre-heated oven, on the middle shelf, and cook until the egg is cooked all way through.  It should take no more than 15-18 minutes.  Check by piercing the middle with a knife and if it comes out "clean" then remove and serve.  If it's still not cooked, turn down the oven temp and cook for an extra 5-6 minutes. 

11. Serve with your favourite side dish and await compliments from friends and loved ones lucky enough to share it with you.๐Ÿ˜Š๐Ÿ’–

We had our yummy frittata with some chopped cucumber and spring (green) onion (known as sybies in Scotland pronounced "sigh-bees") over a bed of lovely fresh spinach and it was so good honeys!๐Ÿ˜‹

I hadn't noticed until I saw the photos but it actually looks like the egg hadn't set properly in the image above but it definitely had.  The runny, gooey stuff in the photo wasn't half cooked egg it was the most fabulous mozzarella cheese, all melty and being the perfect filling in a perfect frittata.๐Ÿ’—

I love making fittatas honeys, love them.๐Ÿ˜Š๐Ÿ’–  It's a wonderful way to use up any leftovers you have in your fridge (as you can see here.) They're also great for packed lunches too.๐Ÿ˜Š
