How are you today? It's such a beautiful, sunny day outside today and the rain's stopped! I know they say it's good for the garden but it's been miserable with the constant, icky, reminds-me-we're-running-into-winter days.
Today, in order to battle the miserable weather I thought I'd share one of our favourite dinners and then, sure enough, the sun appears π
This is such an easy dish to make, it takes no time at all to put together, but it's soooo good!π Why not go grab a cuppa ☕ (don't forget a cookie tooπͺπ) and meet me back here after the page break (there are lots of photos) and I'll tell you all about it.π See you in a few minutes honeys x

Diced Chicken With Tomato & Spinach In A Creamy Cheesy Sauce π
(serves 3-4)
Ingredients:
600g pack of diced chicken (I used frozen because it was what we had)
Approx ½ pack (around 200g) of cherry tomatoes (or any tomatoes cut into smaller pieces)
Approx 2 handfuls of spinach
1 large (around 340g) tub of cream cheese (we used Philadelphia, the garlic and herbs variety - yum!)
Grated cheese and Italian herbs to top
Optional: Broccoli to serve (we used tenderstem broccoli because we had it in the fridge, it's a favourite) or choose your favourite side dish. What about a crispy, green salad? Homemade potato wedges? An assortment of your favourite vegetables,steamed? Any thing you feel like honeys x
Directions:
1. Preheat your oven to 160C (or 320F or Gas Mark 4). While the oven is pre-heating add a little oil to your pan/skillet and place it over a medium heat. Add your diced chicken and allow it to cook, turning occasionally so that it cooks all over.
Note: I used frozen, diced chicken because I had it on hand. If you're using frozen chicken, you'll end up with a lot of liquid in your pan and will need to drain it away before adding anything else.
2. While the chicken is cooking, slice the tiny tomatoes into quarters. If you're using larger tomatoes, slice into small pieces (around bite-size pieces.)
3. Check on your chicken, it should look cooked on both sides and be starting to appear a little golden in parts...
4. With the chicken starting to look good, it's time to add the sliced, tiny tomatoes...
5. After a minute or two, the chicken and tomatoes are joined by a couple of good handfuls of lovely fresh spinach...
6. I added a glass lid for a few minutes to help steam the spinach...
(note: I've just noticed in the photo that my copper effect coating is coming away from the handle of my glass lid. I know it shouldn't matter really, but it's bugging me honeys! I love these pots, they're the best set I've had in years and ok, I've had them for about 2 years or so now but still... <sighs>)
7. When the spinach is wilted, continue to stir over a medium heat for a minute or two before adding the cream cheese...
8. Continue to stir over a medium heat for a minute or two, to heat the cream cheese through and make sure everything is coated with your lovely cheesey sauce...
9. Remove from the heat and add some lovely grated cheese and a sprinkle of Italian herbs to the top...
Note: I used an oven-proof pan/skillet but you could transfer the chicken (in it's delicious creamy sauce) to a casserole or oven-proof dish before placing it into the oven.
10. Very carefully, place your chicken into the oven, on the middle shelf, for 20-25 minutes until the cheesy topping is golden brown and the sauce is bubbling...
Note: I always cut into a piece of chicken to make sure it's cooked all the way through. It always has been but I'm paranoid about these things x

you can find here - watch out though it's sooooo good it'll end up in your meal planner every week.π) have become firm favourites.π
The one good thing about winter (I'm so not a fan) is that it sees a return to all of our favourite "comfort" foods. Dinners that are warming and a joy to make as well as to eat.
We had some lovely tenderstem broccoli with our creamy chicken and it was just perfect but you could serve it with any of your favourite side dishes honeys. What about some home made wedges? (you'll find them here.)
