How are you today? All well I hope? I'm still playing catch up with Blogtober, being a post behind after being set upon by my arthritis this week. It's the UK weather changing is all. Of all the things I ever dreamt of achieving over the years, turning into some kind of a human barometer really wasn't one of them.π
So, here's yesterday's post dear ones. I actually managed to mostly set it up, that is to say choosing which recipes to include and organising photos etc, but by then it was almost midnight and I was so drained after having posted already yesterday, I had to give up and go sleep. So, to celebrate world pasta dayπ (yesterday) here it is.π€
Do you adore pasta honeys? Hubby and I do. We'd be lost without our favourite pasta dishes in our meal rotation.ππ So, for today's catch-up Blogtober post, I thought I'd share five of our favourite pasta treats...
Can you imagine a world without pasta? It's an odd thought really. How often do we, even if we think we're not making a pasta dish that day, reach for a form of it?
We're heading into November and here in Scotland that means making pots of lovely, warming soup to keep out the winter chills. That means lots of yummy veggies and... noodles. I like to reach for the spaghetti to break up and put through our soup. When Hubby has had to commute home through our horrible British winter weather, what could be better to be waiting for him when he gets here than a huge mug of chicken noodle soup to chase the chills away?

Easiest, Yummiest Pasta In The Creamiest, Cheesiest Sauce... Made Two Ways - Both Super Fast And Super Easy!
Starting off with our absolute favourite! We've tweaked this ever-so-cheesy recipe until it's beyond perfect and now make it almost every week. If there isn't a plan for dinner that night, then this will be our go-to dinner.π
Apart from being irresistibly delicious, it's so easy to make that it practically makes itself too. Super Yummy, Vegetarian Rigatoni Bolognese...
You won't believe this delicious pasta dish is vegetarian honeys, honestly. There are really so few ingredients needed too that you probably have then already in your pantry. You'll need a couple of sweet potatoes, a handful of mushrooms, an onion and a can/carton of passata (or a can of chopped tomatoes) with a sprinkle of Italian herbs and your favourite pasta to pour it over (or mix it through) and dinner is ready.π

Delicious 3 ingredient Tomato & Salmon Fusilli..
My first thought on deciding to include this dish honeys was "ooo I wonder if we've got a can of salmon in the cupboard?" I actually looked and we do, so guess what we're having for dinner?π
It's another delicious dish that almost makes itself, and only needs what you probably already have sitting in your pantry to make it too. It's basically a can of chopped tomatoes, a can of salmon (or try using canned tuna, it's fab too) and your favourite pasta.

Spinach & Ricotta Cannelloni Bake..
This was super easy to make honeys and it tastes heavenly too! The cannelloni tubes are filled with creamy spinach and ricotta with a touch of garlic and even though it's so simple to make, it really feels like a special treat. Why not serve with a lovely, crunchy salad or with the fluffiest mashed potato with grated cheese and a little finely diced onion mixed through? Yummmmm!π

Pasta Bolognese Bake - A Whole New Take On Lasagne!
We love this! Hubby once described it as a lasagne pie and I have to admit, the name sort of fits.π We originally tried making this after seeing it on Pinterest and however you look at it, it's certainly a whole new take on lasagne.
I know it seems odd, standing the pasta tubes upright in the spring form tin before filling them with the beef mince/bolognaise sauce, but it works and it's delicious and definitely a treat.π You can find the recipe for this "lasagne pie" here honeys.
