Hope you're well and having a great day :) Having had a meat free dinner of Spinach & Feta Cheese Quiche (you can find the recipe here) on Wednesday, last night I made one of Hubby's favourite dinners for him, and I thought I'd post the recipe for you.
Quick & Easy Beefaroni
Ingredients:
250g minced Beef1 medium onion, finely chopped
1 jar of bolognaise sauce
1 carton/tin of chopped tomatoes
350g of macaroni (elbow pasta)
Basil & Oregano to taste
Directions:
1. Place a pot of water on the stove to boil, when boiling add your macaroni (be careful not to burn yourself honeys) stir well, allow to cook until the pasta has almost doubled in size, (around 14-15 minutes usually) going back occasionally to stir to prevent sticking to the bottom of the pan. Tip: I usually leave a wooden spoon sitting across the top of the pan to prevent the water from boiling over.2. Place a pot or sautee pan on your stove over a medium heat and add your minced beef & finely chopped onion. When mince is browned...
3. Add your carton (or tin) of chopped tomatoes and stir through until combined, add your jar of bolognaise sauce and again stir through until combined and warmed through. Add basil & oregano to taste. Remove from heat and set to one side.
5. Add your cooked pasta to your beef mixture a little at a time, stirring well making sure macaroni is well coated.
6. Continue until all of your pasta has been mixed through with the beef & tomato sauce. Serve with warm crusty bread (garlic bread is yummy!) & enjoy!
