Quick & Easy Beefaroni Recipe

Hope you're well and having a great day :)  Having had a meat free dinner of Spinach & Feta Cheese Quiche (you can find the recipe here)  on Wednesday, last night I made one of Hubby's favourite dinners for him, and I thought I'd post the recipe for you.
Quick & Easy Beefaroni

This really is the easiest, quickest evening meal to make honeys. It's delicious, filling and warming to come home to if its chilly or rainy outside, and so easy to adapt to make it your own too.  There are so many ways to change this, but more of that later :) For now....

Quick & Easy Beefaroni

Ingredients:

250g minced Beef
1 medium onion, finely chopped
1 jar of bolognaise sauce
1 carton/tin of chopped tomatoes
350g of macaroni (elbow pasta)
Basil & Oregano to taste

Directions: 

1.  Place a pot of water on the stove to boil, when boiling add your macaroni (be careful not to burn yourself honeys) stir well, allow to cook until the pasta has almost doubled in size, (around 14-15 minutes usually) going back occasionally to stir to prevent sticking to the bottom of the pan.  Tip: I usually leave a wooden spoon sitting across the top of the pan to prevent the water from boiling over.

2. Place a pot or sautee pan on your stove over a medium heat and add your minced beef & finely chopped onion.  When mince is browned...

3. Add your carton (or tin) of chopped tomatoes and stir through until combined, add your jar of bolognaise sauce and again stir through until combined and warmed through. Add basil & oregano to taste. Remove from heat and set to one side.

4. When your pasta has cooked, approx. 12-16 minutes depending on the pasta.

carefully drain water away.

5. Add your cooked pasta to your beef mixture a little at a time, stirring well making sure macaroni is well coated.

6. Continue until all of your pasta has been mixed through with the beef & tomato sauce.  Serve with warm crusty bread (garlic bread is yummy!) & enjoy!

Now as I said there are as many ways to make this as there are people who love it (lots!) but a couple of ideas are you can add peppers or a little garlic (added when browning your minced beef and onions together) or replace the mince with oven cooked beef sausages, sliced into small pieces.  Or why not add (as I sometimes do) mushrooms, browned with the beef mince and onions.  Just a few examples honeys :) Beefaroni is a fabulous evening dinner and as you can see it's so quick & easy to make and is so delicious :)
