I hope you're well and enjoying the sunny weather. We're expecting thunder storms today, to be honest it would be a blessing really. It might clear the air a little. It's been so warm and humid and the rain would be great for the garden.
So, while our furbaby Jade and I are in the living room waiting for the laundry cycle to finish I thought I'd share a little kitchen experiment that was quite possibly the best yet 😄
Do you remember those egg muffins I tried making recently? Hubby and I loved them, paired with a lovely, crisp, salad of course, that I've been experimenting with different fillings for them every week and we've yet to find a version we didn't like!
Egg muffins make such a great snack to have in the fridge too, so much healthier to reach for a muffin when feeling peckish than to raid the biscuit tin. Perfect for packed lunches too.
On the look out for yet another filling for our now loved egg muffins honeys, I thought what about tuna? We're great fans of the humble pantry staple, a little tin of tuna. Tuna salad is a long time favourite so trying to find a way to make tuna muffins seemed to make perfect sense. Would it work though...
In a word dear ones.... yes! I really was pleased with how these perfect little muffins turned out, Hubby liked them so much he took a couple to work with his salad next day and they were so easy to make they practically made themselves!

Easiest Ever 4 Ingredient Tuna Muffins...
Ingredients:
Makes 6 muffins
1 small can of tuna
110g of mayonnaise
2 eggs
200 g of grated cheese
optional: parsley
Directions:
1. Pre-heat your oven to 180C/250F/Gas Mark 4 (just a little lower if using a fan oven.) Fetch a muffin pan, grease if necessary and place to one side until it's needed. If, like mine, your muffin tray is silicone (I love baking with silicone, so easy to clean and nothing sticks) place it onto a flat baking tray, like a cookie sheet, to keep it stable honeys.
2. Carefully open your can of tuna and drain. Empty the tuna into a mixing bowl and add the mayonnaise.
Add your two eggs to the bowl with the tuna and mayonnaise and mix until all completely combined.
3. Add the grated cheese to the bowl and stir until everything is thoroughly mixed. Use your favourite medium cheese grated honeys, I used a half and half mix of grated Scottish Cheddar and Red Leicester but just choose your favourite. I also added a little sprinkle of parsley but you don't have to. I just really like parsley and it was there on the spice rail so..... 😃
4. When the cheese is thoroughly mixed through the other ingredients, transfer to a muffin tray, filling each muffin "space" since these muffins don't rise very much...
You should have enough for 6 good size muffins, depending on the size of your muffin tray honeys. In the end up I had enough for 7, but it was an experiment after all and Hubby had the extra muffin so it's all good 😃
5. Carefully place your muffins on the middle shelf of your pre-heated oven for 15-18 minutes, until you can push a skewer or a knife into the middle and it comes out clean, so they're cooked through to the middle.
6. Enjoy your muffins warm, fresh out of the oven with a lovely, crisp salad, or allow to cool before placing into a container in the fridge for snacking or as part of a packed lunch...
These muffins really were delicious honeys. They might be my favourite of the varieties we've tried so far...
They were very light, the egg was very fluffy, the cheese was very gooey and the tuna added a sort of savoury taste that was just perfect.
I really am having the most fun experimenting with these egg muffins honeys. Not just trying to find extras I can add to them, but trying to tweak the versions I'v already made.
Like the mozzarella & spring onions version (scallions to our American and Canadian cousins or "Sybies" pronounced "sigh-bees" in Scotland) with grated cheese as a topping...
or the egg muffins with a mixed, diced peppers and cheese filling...
Next time I make the tuna muffins (and I definitely will, they really were yummy and Hubby really liked them) I think I'll try either adding half the mayonnaise and half cream cheese or swapping out the mayonnaise altogether and using just cream cheese instead. Just to see what kind of a difference it makes.
As experiments go, this was a success honeys. Hubby loved dinner, it was such a warm evening the muffins with a crisp salad made a perfect dinner that wasn't too heavy, and best of all, Hubby took a couple of muffins to work with him, with salad, for his lunch next day.
