Hello honeys,
Yesterday I was in the garden, pegging laundry out on the line, and occasionally throwing our furbaby Jade's little ball for her when she brought it to me. As happy a day as I've had for a while :)
So, having finished pegging out laundry, I was happily playing fetch with Jade and something caught my eye. Taking a closer look, it was this.....
A tiny apple! Nothing surprising about an apple on an apple tree you might think, and of course you're right BUT this is the very first apple ever on our little apple tree :) I previously posted photos here on this blog of the gorgeous apple blossom, on this little tree and even made a large downloadable printable too.

"Cheer-Up" Lemon Drizzle Sponge Loaf
Hello again honeys
I'm so sorry I've been missing for the past week, I really haven't been feeling well. Changes in the weather, as all Spoonies know can play havoc with a person's joints, breathing & don't even start me about headaches! Enough complaining Rosie! On with the recipe!
So today, needing cheering up, I felt in the mood for something zesty, zingy & lemony, just because 😊 and this happened...
It's sooooo soft and moist and it smells so gooood!
As you can see from the photo above though, not content with the loveliest, softest lemony sponge I decided it needed to be even more lemony and I covered it with a sticky, sweet, lemony cream cheese frosting!
Who cares about calorie counting, I need cheering up 😊 So honeys, here it is, a "cheer-up" Lemon Drizzle Sponge Loaf, enjoy!

Super Easy & Delicious Banana Muffin Recipe
Hello honeys,
Hope you're enjoying the beautiful sunny weather. It's been glorious, a little too hot if I'm honest but better than rainy & cold any day :)
So, today I was at a loose end and thought I'd make some lovely banana muffins. They're so, so easy to make and taste amazing too.
Don't they look yummy? They take literally minutes to make & would be great to add to a packed lunch or just to enjoy with a coffee :) Store in an airtight container and they'll even keep for a few days... although they're so delicious they probably won't last that long :)
So, onto the recipe then honeys....

Huge Jane Asher Bakeware Haul!

Another gorgeous glorious sunny day to be thankful for, and I so am :) Don't you feel better on sunny days? Coping with all of the aches & pains associated with a chronic illness can seem a little easier and smiles are so much easier to find. There is so much joy to be found in a sunny day :)
Last week my hubby was on hols from work and we did our big grocery shop. Whilst shopping I made the most amazing discovery. Our local Poundland store has a huge selection of the Jane Asher range of kitchenware/bakeware. Joy! It's so pretty, available in the loveliest pastel shades, and seems great quality too.
I thought I'd share what I managed to find. I know it's a really silly thing to be happy about, but they really are so pretty and who doesn't want to be surrounded by prettiness while cooking & baking 😊 What can I tell you honeys, some girls want diamonds, I'm just as happy with pretty containers for my baking ingredients :)

Kitchen Organization: Fridge Bins!

Hope you're all well, it's sunny here today & I've been happily loading the washing machine with everything I can find to hang outside and make the most of the lovely sunshine. Hubby is home from work this week and is helping, bless him.
So today I thought I'd blog about something I've been doing for a while now. I love containers, I really do. I love corralling things together. It creates order, and makes putting things away, even food, so much easier.
Let's have a look at how I've made finding items in our fridge a breeze using bins from Poundland 😊

Kitchen Organization: Pantry Re-do!
Hello again honeys,
We're still working our way through the house, one little cupboard or space at a time and we've finally made it to the kitchen yaaaay :) As you know I already tackled the under sink cabinet which you can see here and yesterday managed to complete the tall larder cupboard which serves as our pantry.
It was a task, it really was, but it's done now and I've put in place some systems which I hope will make things a little easier when I come home with my grocery shop in future.

Super Easy Two Cheese & Red Onion Quiche!
Hello again honeys :)
How are you today? I'm back in the kitchen again 😊 Do you remember the spinach & feta cheese quiche recipe I blogged recently? Hubby & I both adore quiche, it's so simple & quick to make and there are as many different varieties as there are people who love them 😊
What's also great is that it can be eaten cold, so it's great for a picnic or leftovers can be kept in the fridge for a healthy choice when snacking is required 😋
So dear ones, this is our super easy two cheese & red onion quiche recipe. I hope you'll love it as much as we do 💖

Sunny Fridays & Giant Cupcakes!

Hi honeys,
what a glorious, beautiful day yesterday was. Such joy to see the sun shining so brightly first thing in the morning and continuing to smile on us all day long :) Like almost every other housewife faced with a gloriously sunny day teamed with a day off work first thing I did was yell "yaay!" and get started on laundry :)
OK, is it just me? I mean a very dear friend once told me quite some time ago that a great day was wasted on me! Apparently when blessed with a fabulously sunny day I'm supposed to grab a good book, something tall and chilled to drink, the biggest sunhat I can lay hands on and chill in the garden with my feet up. What I'm not supposed to do (I was told quite sternly) is to pull down curtains, strip beds & wander the house desperately searching for things to wash!
This is fun for me though! This, to me, is like a weekend at Disneyland to other folk :) It also has to be said that I would love to be able to fly around the house pulling down curtains (!) and whatever else but those days are long gone. Nowadays I more shuffle around, I figure that's ok though, just so long as I keep moving :)
Of course there are other things I enjoy doing on a sunny day off work other than my laundry obsession :) Like baking, which naturally brings us on to giant cupcakes :)

Undersink Cabinet Organization!
Hi honeys,
Back with another little organizing project. So we finished the tiny little mudroom/entryway at the front door and the mail sorting system (and printable) for the hallway and most recently we completed organizing our lower hall.
For my next little project I chose the cabinet under the sink in our kitchen. I thought it was a small enough project to complete in a day, and I had an idea of how I wanted it to look. So, here it is, warts & all, before & after :)
