Blogtober Day 14: Seriously Scrumptious Sausage & Egg Oven Bake...

Today it's back to the kitchen again for a fabulously tasty and seriously scrumptious sausage and egg oven bake...

This really is one of those dishes that almost makes itself honeys.  It's perfect for busy nights when you have lots to do but still have to get dinner on the table.  Best thing is it can be made with only two ingredients and you probably already have them in your fridge & pantry!

Rosie's Seriously Scrumptious Sausage & Egg Oven Bake 


Ingredients:


(serves 3-4) 

200 g of small sausages (approx) 
6-8 medium to large eggs 
Olive oil


Optional: 


Half of a medium onion, diced into small pieces.
Salt & pepper to taste.


Directions:


1. Pre-heat the oven to 180 C (160 C for fan assisted ovens) or 350 F or gas mark 4

2. Add a few drops of olive oil to a saute or frying pan over a low to medium heat. Place your sausages into the pan and keep stirring/turning until they're gently browned. If you want to add onions, do it now so they cook with the sausages.

2.  Fetch an oven proof dish and place your sausages (and onions if you've added them honeys) inside, spacing them out evenly around the dish.

I always use small, skinless, cocktail sized sausages.  Here in Scotland they're called Wee Willie Winkies (a very fond childhood memoryπŸ’— and perfect for making a good pot of Scottish stovies.) but I honestly don't know if they can be bought anywhere else honeys.

Whichever sausages you're using, try to find smaller, skinless ones.  They cook well and you don't want to have skins ruining your oven bake. If you're using thicker sausages allow an extra few minutes cooking time and check by piercing with a knife that the sausages are cooked.

3.  In a bowl, beat your eggs together until combined. and then pour the egg into the oven dish containing the sausages (and diced onion if you're having them.) Stir/move the sausages (and onion) around the dish to make sure they're all evenly coated in the eggs.

4. Carefully place the oven dish on the middle shelf of the oven and bake for 30 - 35 minutes until all of the egg has cooked through.  It will be lovely and golden browned on top and the sausages will be cooked all the way through.

5. Slice and serve to happy loved ones...

I used a one litre capacity oven dish and this should serve 3-4 people easily.

Try to allow for approx 1-2 eggs and around 50g sausages per person. The sausages I use have 206 g per pack.

Use a dish you've used before for an oven bake that has served enough for your needs, then that can be your guide. Don't fill your dish to the top with your egg & sausage combination, the eggs will expand a little as they cook.  We had our yummy oven bake with a crunchy salad and it was delicious...

You could just as easily have it with anything you choose though honeys.  Why not try a slice with oven baked wedges, with a baked potato, with crunchy salad or just on it's own.  It can be enjoyed warm from the oven or cold as part of a packed lunch.  Enjoy πŸ˜‹

So, what do you think honeys?  Do you enjoy oven bakes?  If so, which are your favourites?  If you aren't fond of sausages, why not use rashers of bacon instead?

Why not cook the bacon rashers in the oven or under the grill first, allow them to cool before carefully slicing into small bacon bits and then combining these with your egg before baking.

You could also, if you like cheese, add a little grated/shredded cheese to the oven bake (whether sausage or bacon, or both :) before cooking for a lovely cheesy coating.
