Super Easy & Delicious Banana Muffin Recipe

Hope you're enjoying the beautiful sunny weather. It's been glorious, a little too hot if I'm honest but better than rainy & cold any day :)

So, today I was at a loose end and thought I'd make some lovely banana muffins. They're so, so easy to make and taste amazing too.

Don't they look yummy?  They take literally minutes to make & would be great to add to a packed lunch or just to enjoy with a coffee :) Store in an airtight container and they'll even keep for a few days... although they're so delicious they probably won't last that long :)

So, onto the recipe then honeys....


Ingredients:

150g caster sugar
250g self raising flour
75g oatmeal
2 medium eggs
2 large bananas
150ml milk
50 ml oil

Directions:  

1. Put paper cases into a muffin tin, then preheat your oven to 185C/365F
2.  Gather your ingredients

3. Fetch a large mixing bowl, add your sugar, oatmeal & (sieved) flour. Fold together with a spoon till combined. Make a hole or well in the middle of the bowl. Set to one side for now.

4. In a small bowl use a fork to mash your bananas, gently stir through your oil, milk and two eggs (which you've already whisked together) until they are combined. NOTE: the result is gloopy to say the least! The oil will rise to the top and it looks entirely unattractive but don't worry about it, it's perfectly fine!

5.  Gently add a little (about a third) of the banana, eggs, milk & oil mixture into the bowl containing your sugar, flour & oatmeal mixture. Your banana mixture should be poured carefully into the hole or well you made in the middle of the bowl, and very gently stirred, not beaten. Continue till all of the banana mixture is combined.

As you can see the mixture is thick and a little lumpy. This is fine, all you need to do is to make sure that the dry ingredients are combined with the "wet" ingredients thoroughly, no "floury lumps".

6. Spoon the mixture into the muffin cases, I made 16 muffins in total from this mixture, but it will depend on the size of muffin cases used.

7. Gently place into the oven and bake for 12-18 minutes, or until golden brown.  You should be able to push a knife through the middle and it will come out clean if they're cooked. Place onto a cooling rack till completely cooled.

8. Serve & enjoy!

These muffins are very dense, like a bran muffin, but so tasty.  I managed to eat one but hubby ate two :)  You can eat them on their own or why not slice like a scone and spread with butter or add cream?  

Not a huge fan of bananas? I adore bananas but if you're not so keen why not try replacing the bananas with mixed berries, a handful of blueberries or strawberries?  Whichever way you make them honeys, enjoy :)
